MOROCCAN FEASTS

In this class we will gain insight into the enchanting culture of the Moors by creating traditional foods with authentic ingredients. Learn how to balance bold flavours with subtle sweetness. This vegetarian class will discover how to make homemade harrisa, stuffed flatbreads, tagine and – conquer the art of cooking light fluffy couscous or use millet as a gluten free alternative. Fermentation has recently come into the limelight for the numerous health benefits derived from eating cultured food as well as the delicious depth of flavour that is achieved. A five day gardening and cookery course set on an organic farm nestled in the Cotswolds learning how to grow vegetables and create delicious seasonal meals from seed to plate. As well as learning how to prepare delicious seasonal vegetarian meals inspired by the veg garden we will also explore preservation, fermentation and sourdough bread baking.
