

Immerse yourself in the vibrant world of Indian cooking with our hands-on Indian Thali Cookery Class. In this session, you’ll explore the art of balancing spices, layering flavours, and mastering the techniques that make Indian food so extraordinary.
You’ll learn where to source authentic ingredients and how to use them to create delicious, wholesome dishes. We’ll start by toasting and grinding our own Garam Masala blend, which will become the aromatic backbone of our menu. Next, we’ll make soft, fresh flatbreads from scratch, prepare a selection of flavourful curries, and finish with a stunning lemon cashew rice.
By the end of the class, you’ll have a confident understanding of key Indian spices — including asafoetida and amchoor — and ingredients like tamarind and curry leaves. You’ll also learn how to prepare and use spices for optimum freshness and flavour, giving you the skills to recreate authentic Indian meals at home with ease.

Natural Cookery School recipes are inspired by the season. Classes are a combination of hands-on and demonstration, with plenty of added tips and knife skills. You will work in pairs in our teaching kitchen, creating the recipes and tasting along the way. We'll enjoy a shared meal at the end of the class, so please bring a container in case of leftovers. You will be provided with an apron to use for the day and recipe packs to take home. No washing up is necessary as we have someone on hand to take care of that.
