Hot Chocolate On A Stick

Makes about 10 sticks, depending on mould size
Ingredients
250g good dark cooking chocolate (Green and Blacks works a treat)
120g icing sugar
30g cocoa powder

You will also need:
wooden craft sticks, cake or lolipop sticks or wooden spoons
silicone mould for chocolates or ice cubes
double boiler for melting chocolate

Seive icing sugar and cocoa powder into a bowl and set aside. Break chocolate up into very small pieces into a glass or stainless steel bowl. Place bowl on a pot of boiling water. Make sure the bowl sits securely on the pot and does not allow any steam to escape. Turn the water down to a simmer and stir chocolate until 2/3 dissolved. Remove from water and stir to melt completely. Add cocoa and sugar in stages, a third at a time, stirring as you go. The chocolate will thicken up, but don’t worry you still have time to pop it into moulds.

Spoon the mixture into the chocolate moulds or ice cube trays, silicone works the best. When mould is filled, lift up the corner of the mould and tap on the surface to release air bubbles and smooth the surface. Place in the refrigerator to chill for an hour or until firm. The lolly sticks should stand up immediately, but if not place chocolates in the fridge and check after ten minutes to see if to see if a lolly stick will stay upright, when it does, insert a lolly stick into the centre of each mould. The lolly sticks may stay in straight away, if so insert immediately then chill in fridge.

Package and decorate.
