Ingredients

  • 200g frozen peas
  • 200ml boiling water
  • 1 tbsp fresh parsley, chopped
  • 3 tbsp fresh mint, chopped
  • 1 tbsp capers
  • 2 spring onions, finely chopped
  • 40g gram (chickpea) flour
  • 1 tsp baking powder
  • 1 tbsp lemon juice
  • ¼ tsp salt
  • ⅛ tsp ground black pepper
  • 25g vegan butter (for frying)

Method

1️⃣ Place peas in a bowl and cover with boiling water. Let stand for 5 minutes, then drain.
2️⃣ Chop the parsley, mint, capers, and spring onions.
3️⃣ In a food processor, blend the peas, herbs, and spring onions until slightly mashed.
4️⃣ In a bowl, mix gram flour, baking powder, salt, and pepper. Add the pea mixture and lemon juice, stirring to combine.
5️⃣ Heat a little vegan butter in a frying pan over medium heat. Form 4 pancakes and cook for 3-5 minutes per side, flipping when the top starts to dry.
6️⃣ Serve warm with a dollop of plant-based yogurt or a squeeze of lemon juice.
