Ingredients

  • 1 large celeriac, peeled & cut into 4 thick steaks
  • 2 tbsp olive oil
  • 2 tbsp vegan butter (e.g., Naturli) or more olive oil
  • 1 tbsp fresh lemon juice
  • 2 cloves garlic, finely chopped
  • 1 tbsp Ras el Hanout spice blend
  • Salt & black pepper to taste

Method

1️⃣ Preheat oven to 200°C (180°C fan). Line a baking sheet with parchment paper.
2️⃣ Peel the celeriac and cut into 1-inch thick disks. Score a crisscross pattern on both sides.
3️⃣ In a bowl, whisk together the olive oil, melted butter, lemon juice, garlic, rRas el Hanout, salt, and pepper.
4️⃣ Brush half the mixture over the celeriac steaks.
5️⃣ Roast for 15 minutes, then flip the steaks and brush with the remaining marinade.
6️⃣ Continue roasting for 15-20 minutes more until tender and golden.
